KHATTA URAD (WHOLE URAD DAAL) Recipe | Main Course Recipe by reluctant_chef |
| INGREDIENTS | Very tasty and healthy! My fave😊
Ingredients:
Urad (sabut or whole urad)
Besan (chana aata / gram flour)
Dahi (yogurt) - preferable sour
Haldi powder (turmeric powder)
Chilli powder
Dhaniya jeera powder
Salt
Oil
Kadi patta (curry leaves)
Crushed garlic
Jeera
Corriander leaves (for garnishing) | METHOD | Take 1 cup urad with 2.5 cups of water and let it cook in the pressure cooker for 3 whistles (after one whistle, reduce the flame). Then take it off the flame and once cooled open the cooker.
While urad is getting cooked, in a separate bowl, mix 1 heapfull tbsp besan with 3 tbsp dahi (preferable sour), salt, pinch of haldi powder, red chilli powder and dhaniya jeera powder. Mix it well. Ensure there are no lumps. Then add 2 cups of water and again mix.
Now make tadka by heating some oil in a small pan and frying jeera (cumin seeds). Once jeera crackles, add garlic and then kadi patta for 30 seconds. Pour this tadka in the dahi besan mixture.
Once the urad is cooked, pour the dahi besan mixture on the urad in the cooker. Add salt if required, and bring it to a boil. Once it starts boiling, switch off the gas. Your khatta urad is ready. (Add lemon in case your dahi is not sour enough)

(General Tip: If you are adding garlic to any recipe, you should avoid adding hing since have strong flavours)
