SPICY THICK SEV (TEEKHA GHANTIYAN) Recipe | Snacks Recipe by reluctant_chef |
| INGREDIENTS | Homemade spicy crispies that go perfectly with tea or colas

Ingredients:
Besan (chana or split chickpeas flour)
Rice flour (can grind rice very finely for instant rice flour)
Haldi powder
Chilli powder
Salt
Oil
Crushed garlic (optional)
Equipment: Sev press or Chakri sancha machine (available on Amazon) | METHOD | In a wide bowl, mix 1 full cup besan with 1/4 cup rice flour, 1.5 tbsp oil, pinch of haldi, 1 tsp chilli powder and 1 tsp salt. Add water gradually to make it into a semi-stiff dough.
Heat oil in a frying pan. Select the base with the medium-size round holes and screw it into the sev presser. Then grease the sev press, transfer the dough in it and close it tight. Then over the hot oil, press out ghantiyan (thick sev) in the pan. Deep fry on a slow flame, a few at one time, until it turns golden brown. Then take it out and transfer to a paper napkin or absorbent paper. Your thick spicy ghantiyan is ready.
Enjoy with a hot cup of tea or a cold drink!
(Tip: This same presser can be used for many savouries, including chakli. Rice flour is used to make the ghantiya or anything crispy)
