TRICOLOUR
PARTY SANDWICHES
INGREDIENTS
Bread Loaf-

Butter - 200
gms
Ingredients
for different layers:
For the
red layer-
Chopped tomatoes-
4
Butter-1 tbsp.
For the
green layer-
Fresh mint
or coriander leaves - 5 tbsp
Butter - 1
tbsp.
For the
yellow layer-
Boiled eggs-
3
Butter - 2
tbsp.
Grated cheese
of 2 cubes
Salt to taste
Black pepper
- 1 tsp.
Mustard powder
(freshly ground)
Yellow colouring
- 2-3 drops
For coating
and garnishing:
Chopped coriander
or Lettuce leaves
Tomato and
cucumber slices - 4-5
METHOD:
For preparing
the layers-
Red layer-
Grind the
chopped tomatoes; mix in butter and salt to taste.
Green layer-
Grind the
fresh coriander or mint; add butter and salt to taste.
Yellow layer-
Mash the boiled
eggs, add grated cheese, butter, mustard powder, black pepper and salt
to taste. Add 2-3 drops of yellow food colouring to make it yellow.
Take the bread
loaf and remove the crust. Slice it length wise into four.
Spread the
butter on all the slices. Prepare the tricolour layers after mixing all
the ingredients and apply a thick coating on the three slices evenly and
sandwich these slices with the fourth one pressing lightly. Cover with
a damp cloth napkin after wrapping with a greaseproof paper. Keep it in
the refrigerator for half an hour to set.
Take out the
loaf. Coat the sides of loaf with melted butter and dust with chopped cashew
nuts or walnuts. Finally cut even slices to make triple layered sandwiches
and arrange on a tray decorated with coriander leaves, cucumber slices
and tomato wedges.
