INGREDIENTS: 2 cups white
sesame seeds
METHOD: Knead the maida
with 1½ tsp oil and a pinch of salt to make soft dough. Keep it
covered for some time. Heat white sesame on a low flame and stir continuously
so that it doesn’t fall out of the pan. When cooled, pound them. Mix the
jaggery into the sesame and pound together so that it mixes well. Mix nutmeg
and cardamom powder into this mixture. Make small balls of the dough and
placing it in the palm, press it to make a small indentation in the middle.
Fill this indentation with a ball of the sesame and jaggery mixture. Make
a stuffed ball. Smear some oil on a rolling board and roll out a roti
(called poli in Maharashtra) as thin as possible. Shallow fry the roti
till it is golden brown in colour. Repeat the same procedure for a good
number of teel rotis as per your family’s requirements.
