CORIANDER RICE Recipe
Main Course Recipe by Uma Anniyappan


 30 minutes  3 nos

  INGREDIENTS
1.Coriander leaves - 1 bunch
2.Pudhina leaves - 1/2 bunch
3.Curry leaves - 1/2 bunch
4.Onion- 2 nos
4.Mustard seeds - 1 tablespoon
5.Oil - as required
6.Salt - as required
7.Cashew nuts- 10 nos
8.Remained white rice- 2 cups

For Coarse Grinding:

Chana dhal - 2 table spoon
Urad dhal - 2 tablespoon
Dry red chillies - 6 nos
Curry leaves - 8 leaves
Groundnuts - 10 nos
Jeera - 1 tablespoon
Cumin seeds - 1/2 tablespoon


  METHOD
Heat the pan add 1 tablespoon of oil and shallow fry the ingredients listed under coarse grinding.

Remove and coarsely grind it and keep it aside.

Now take all the green leaves mentioned above and coarsely grind it and keep it aside.No need to add water.Now green mix is ready.

Now heat the big pan, add 6 tablespoon of oil and allow it to heat.After this, crackle the mustard seeds and fry the red chillies, onion.At this stage add salt and the coarse mixture and stir it well. After all gets mixed ,add the green mix and the remained white rice and mix it slowly under medium flame for 3 to 4 minutes.

Garnish it with fried cashewnuts.

Now healthy and delicious coriander rice is ready to serve.

In the same method, we can prepare pudhina rice, spinach green rice,curry leaves rice based on the quantity of green leaves we add.

We can prepare this dish with remained white rice.

tip: don't cook the coriander,curry and pudhina leaves.Wash it well and chopped it finely and coarsely grind it without adding water.
