Cabbage, Apple and Carrot "Slaw"

Ingredients:
Shredded cabbage - red and green
Thinly cut match stick pieces of apple (cut this just before making the slaw as it will oxidise and turn brown quickly)
Thinly cut match stick pieces of carrot
Chopped green onions
Chopped jalapenos
Extra Virgin olive oil
Apple cider vinegar
Fresh lime juice and zest
Cayenne pepper
Freshly chopped coriander
Salt and pepper to taste
Sour cream
Method
Variation 1:
In a large bowl add all the shredded cabbage, apple strips, carrot strips, green onions, jalapenos and coriander. Toss together lightly.
To make the dressing, in a jar start add olive oil and apple cider vinegar in equal quantities. Close the lid and shake well. Open and add a touch of honey and adjust to your taste. Close and shake well again until all the liquids are mixed well. Then open and add a bit of lime juice, a sprinkle of cayenne pepper and salt and black pepper. Close the jar and shake well again until everything is thoroughly mixed. Open, taste and adjust to your preference.
Variation 2:
In a large bowl add all the shredded cabbage, apple strips, carrot strips, green onions and coriander. Toss together lightly. Then add a couple of spoonfuls of sour cream and lime juice and zest which will then it down a bit. Adjust the sourness to your taste. Lastly add some salt and pepper.
