Pico de Gallo - filling for Tacos
Ingredients
Fresh diced plum tomatoes (or any other tomatoes you can find)
Chopped onion
Chopped jalapeno chillies
Fresh chopped coriander
Fresh lime juice + zest
Salt and pepper to taste
Method
In a bowl, add the diced tomatoes, jalapeno chillies, chopped onions and coriander. Add the lime juice and lime zest and season with salt and pepper to taste. Mix well. You can eat this right away but the secret to a really fabulous taste is to let it rest. So if you have time, cover it and let it sit in the refrigerator overnight or at least for a couple of hours to allow all the flavours to meld beautifully together.
