Cauliflower Filling for Tacos

You can also mix or substitute with broccoli “rice”

“Riced” cauliflower
Finely chopped capsicum (use as many different coloured peppers as you can)
Chopped onion
Chopped garlic
Smoked paprika
Regular Paprika
Cayenne Pepper
Garlic powder
Onion powder
Ground cumin
Fresh lime juice
Lime zest
Salt and pepper to taste
Cooking oil

Method
Process fresh cauliflower florets in a food processor to make cauliflower rice. Be careful not to overdo it or it will become too pasty. If you don't have a food processor you can use a grater or even chop it super finely with a knife.

Heat some oil in a pan and add the chopped onion. Cook till slightly translucent and then add the garlic. Saute for a couple of minutes and add the salt and all the other spices. Cook for a further 3-4 minutes to get rid of the rawness of the spices. Then add the cauliflower rice and chopped capsicum and cook for a couple of minutes. If the oil is all soaked up, add a splash of water to avoid the spices from getting burned. Add the fresh lime juice, lime zest and black pepper and adjust to taste.

You can also use a Cajun spice mix, jerk mix, or any other premade Mexican blend of spices.
