Phansi-gaajar-mattar ki subzi (French beans, carrots and Peas)


Ingredients
French beans (phansi)
Carrots
Green Peas
Fresh Cream (malai)
Corn flour
Haldi powder
Red chilli powder
Dhaniya jeera powder
Rye (black mustard seeds)
Jeera (cumin)
Kadi patta (curry leaves)
Hing
Salt
Oil

Method
Cut pieces of French beans and carrots. Then heat some oil in a pan and saute rye, jeera, hing and kadipatta. Then add French beans, carrot pieces and green peas. Cover the pan and cook for 10-15 minutes (depending on the quantity), till the vegetables soften. Then add a pinch of haldi powder, dhaniya jeera powder, red chilli powder and salt, mix well and allow the spices to soak in for another 5 minutes.

Then in a bowl, take 2-3 tbsp of fresh cream and mix 1 tsp of corn flour, mix well. Mix this cream to the vegetable and let it cook for another 1-2 minutes.

Your Bean-gaajar-mattar subzi is ready!

(Tip: You can use either fresh or frozen green peas. Carrots and peas add a fresh sweetness so best enjoyed in winter when they are in season)
