Baigan Aloo ki subzi (eggplant potato vegetable)
Ingredients
Big baingan (eggplant)
Potatoes
Tomatoes
Onions
Garlic
Ginger
Haldi powder
Chilli powder
Dhaniya jeera powder
Garam masala
Salt
Oil
Method
Heat oil in a pan and saute crushed garlic, crushed ginger and finely chopped onions. Once brown, add diced eggplant pieces and potatoes. Cover and cook on a slow flame for 2-3 min. Then add tomatoes and haldi power and mix well. Once slightly cooked (for a further 2-3 minutes), add red chilli powder, dhaniya jeera powder, garam masala and salt. Cover pan keeping some gap, and keep stirring occasionally for another 20 min, or until potatoes become soft.
Your baingan aloo subzi is ready. Garnish with corriander leaves. Enjoy!
