Avacado Salad with Charred Red and Yellow Peppers


Ingredients
Very easy, very healthy ... juicy grapes are an added bonus!

Ingredients:

Avacado
Red peppers
Yellow peppers
Spring onions
Black grapes
Olive oil
Black pepper
Salt
Lemon

Method
Heat olive oil in a pan and saute spring onions, yellow and red peppers till charred. Then mix them in a bowl with diced avacado pieces, halved black grapes (can remove seeds of any) and spring onion greens. Add salt, black pepper lemon. Your salad is ready!

The crunchiness and taste of the charred veggies beautifully compliments the sweet juicy black grapes and the creamy avacados.

Enjoy!

(Tip: if you don't want to take the trouble of sauteing, no issues, you can soften the peppers in the microwave for 20 secs. And if you like them crunchy, don't do anything, just mix in salad as is)
