Asian Salad with Tofu


Ingredients
Fairly easy! A tasty and colourful accompaniment to any meal

Tofu (firm)
Cabbage
Raw Mango
Carrots
Corriander leaves
Mint leaves (pudina)
Sesame seeds (til)
Asian salad dressing
Lemon
Olive oil
Green chillies
Salt

Method
Finely chop the cabbage (long and thin). Same with the raw mango (cut into matchsticks). Grate the carrot with a course grater. If using spring onion, slice it diagonally and finely. Generous amount of roughly chopped/ (or hand torn) coriander and fresh mint leaves.

Toast the sesame seeds on the tava so that you get a nice rich nutty flavour until they start popping and flying around.

Slice the firm tofu into thin strips. Coat with cooking oil, sesame oil and a tiny bit of soy sauce in a bowl. Then spread them out on a nonstick and let them cook until both sides are slightly crisp.

Mix all of this into a big bowl with a generous amount of Nutcracker's Asian salad dressing. (It already has a kick, but if you love spicy food you can add little finely chopped green chilli). Add a squeeze of lemon (to taste).
