Rava (suji)
Adrak (ginger)
Green chilli
Salt
Haldi powder
Red Chilli powder
Sugar
lemon juice
Oil
Eno fruit salt (ONLY if dudhi is not soft
fresh dudhi will always be soft and watery and will not need Eno or any other baking powder)
Method
Grate one dudhi. Then to 2 cups dudhi, add 1 cup besan, 1/2 cup rava, adrak (ginger), green chilli, salt, haldi powder, red chilli powder, 1 tsp sugar, 1 tsp lemon juice, 2 tsp oil and 1/4 eno powder (ONLY if dudhi is not soft; fresh dudhi will always be soft and watery)
Mix all the above ingredients in a bowl. Then in a steamer, grease the plates with oil and steam them for 20 min.
Then take out the plates from the steamer and let them cool for about 10 min. Then cut them into squares.
Heat some oil in a pan and saute rye and kadi patta. Then add the cut muthiya pieces and brown them slightly. Your Dudhi na muthiya (lauki ka muthiya) is ready.
