GUR PAPDI (GOD PAPDI)

Ingredients:
Wheat flour
Gur (jaggery)
Ghee
Almonds and fennnel (saunf) for garnishing
Method
Take 3/4 cup gur and grate it as fine as possible and keep aside. Grease a small thali or flat plate with edges and keep aside. Grate almonds and keep ready
In a wide pan, take one full cup flour with 3/4 cup ghee and patiently mix well. Then on a slow flame roast on a slow flame while stirring continuously (be careful since flour has a tendency to get burnt very easily) for about 15 minutes or till it turns slightly golden brown and the flour start turning.
Then take it off the flame, transfer it to the flat pate with edges and quickly mix in the grated gur so that it melts with the hot flour. Keep pressing down to ensure there are no lumps. You can use the base of a katori to flatten the gur papdi. Clean the edges with a flat ladle or a spatula.
Sprinkle fennel seeds and grated almonds. And press them down with the base of a katori to prevent them from falling off. Then after 3-4 minutes, cut them with a shape knife into square or diamond shaped pieces. (Don't let it cool too much else it will become hard and difficult to cut). Now let it cool completely and then with a sharp flat ladle, peel out the pieces and transfer to a plate. Your gur papdi is ready.
