Sauteed Garlic Zucchini
Ingredients
Rich in anti-oxidants, very quick and easy!
Makes for a great side dish. Cook it some more, and it can also be a perfect topping on toast.
Ingredients:
Zucchini
Garlic
Olive oil
Oregano
Red pepper flakes
Cheese
Method
Slice thin round zucchini slices. Heat olive oil in a pan and sautee garlic for 30 seconds. Then add zucchini slices and oregano, cover and let it cook for about 10 minutes. Add red chilli flakes and salt and mix well. Your sauteed garlic zucchini is ready.
Garnish with Parmesan cheese. Enjoy!
(Tip: if you want to make it as a zucchini toast, cook zucchini for 5 more minutes and use it as topping on toast)
