ALOO PANEER CHUTNEY Recipe
Chutney/Dips Recipe by Smita Nadgir


 35 Minutes  4 Persons

  INGREDIENTS
500 gms potatoes (peeled and cut into 4 pieces)
100 gms paneer - grated
Small pice of ginger - finely chopped
3 tbsp cashewnuts
1-2 small bunches of coriander leaves
1-2 small bunches of mint leaves
8-10 green chilies
2 tsp amchur (dry mango) powder
Salt to taste
Oil for frying

  METHOD
1. Scoop out the middle portion of the potatoes with a spoon and deep fry in hot oil until golden brown.

2. Mix well, grated paneer, cashews, chopped ginger, few coriander leaves, 2-3 chopped green chilies in a mixing bowl and stuff in the scooped portions of potatoes. Keep aside.

3. Mix remaining green chilies, coriander leaves, mint leaves and blend them in a mixer to a fine chutney. Add amchur powder to this and mix well.

4. Heat oil in a pan and add the above chutney. Fry for a while and add the stuffed potatoes. Cover and cook for 15 minutes or until the potatoes are tender.

5. Serve hot with chapaties.
