Wash and skin the chicken.
Cut into 1 - 2 inch sized pieces.
Slice the onions and the
capsicum into long, thin slices.
Pour oil in a pan and heat
it until just hot.
Put both the onion and capsicum
slices into the hot oil and fry them till they are well cooked.
The onions should be dark
amber color and the bell peppers should be very soft when touched. This
would take about 7 - 8 minutes.
After the onions and bell
peppers are fried, add the chicken pieces and fry till they get slightly
browned on their sides.
Now add the red pepper powder,
Sil soya sauce, vinegar, Sil red chilli sauce and salt to the chicken.
Mix well till the chicken
is well coated with the ingredients. Fry for about a minute or two.
Then add the water and cover
the pan with a lid. Allow it to cook for about 5 minutes.
Remove the lid and keep cooking
until all the liquid is dried up.
If you have cilantro leaves
slice them into tiny pieces and sprinkle it over the chicken after you
take it out of the heat. This is just optional.
Serve Hot.
