DOSAI
INGREDIENTS: 1 cup udad dal (black gram)
METHOD: Soak the udad dal for 2 hours and then grind to a fine paste. Sieve the maida and then add a little water at first and then add more water to make a batter of the same consistency as the udad dal. Cover both the batters and leave it to ferment overnight.Next morning mix both the batters together and add salt and the desired amount of water. The batter should be mixed well. Grease a pan (tawa) especially kept aside for dosas and then spread the batter thinly on this in a circular motion with the back of a ladle. Roast it on both sides using oil. Serve hot with sambhar and chutney. A variation: For masala dosa, you have to serve it with sautéed potatoes.
