1. Spinach Rice

Rice cooked with baby spinach brings out the real colour of the vegetarian dish and is one of the favourites especially among the vegetarian people.

Ingredients
  • Greek extra virgin olive oil – 100ml
  • Onion – 1, finely chopped
  • Baby spinach leaves – 500g, washed and finely chopped
  • Long grain rice – 300g
  • Dill – 1 bunch, finely chopped
  • Lemon – 1 to 2, extract juice
Preparation
  • Heat oil in a pan and add onions to it. Gently cook the onions making sure the colour does not change.
  • Add spinach and half of the dill and cook on high flame. Stir constantly and cook till the water of the spinach gets evaporated.
  • Add rice to it and 600ml of water. Bring it to boil. Turn the heat down and cook the rest of the time on simmer.
  • Cover the pan and cook for 25 – 30 minutes. In between stir the rice so that you get an idea whether you need to add some more water or not.
  • When the rice is cooked, add the remaining dill. Season well and squeeze the lemon juice on it before serving.

2. Bun and Butter Pudding

Bun and butter pudding is just a twisted flavour of bread and butter pudding because here, hot cross buns are added instead of bread.

Ingredients
  • Double cream – 300ml
  • Milk – 600ml
  • Eggs – 4
  • Golden caster sugar – 100g
  • Vanilla essence – 1 1/2 tsp.
  • Hot cross buns – 8
  • Soft butter – 40g
  • Marzipan – 100g, cubed
  • Chunky marmalade – 3 tbsp.
  • Icing sugar
Preparation
  • Preheat the oven. Heat cream and milk on a low flame. Take a separate bowl and whisk eggs, sugar and vanilla with a fork. Now add the cream mixture slowly to it.
  • Take an ovenproof dish and spread the buns after cutting them half. Spread butter on the buns, dot with marzipan and add marmalade on the top with a brush.
  • Pour the cream mixture and let it soak and set for 15 minutes. Gently press the buns after they are soft.
  • Bake the pudding for 50 minutes and then let it set for 10 minutes. Dust with icing sugar and serve the pudding warm.

3. Egg Sponge Cake

Sponge cake made with eggs is extra light and fluffy. It can prove to be a real show stopping cake this Easter.

Ingredients
  • Butter – 250g, melted
  • Eggs – 5, beaten
  • White castor sugar – 250g
  • Vanilla extract – 1 tsp.
  • Fine flour – 250g
  • Baking powder – 1 tsp.
  • Unsalted butter – 250g
  • Icing sugar – 600g
  • Milk – 2 tbsp.
  • Vanilla pod – 1
  • Food colour – optional
  • Cocoa powder – for dusting
  • Small chocolate eggs
Preparation
  • Preheat the oven. Grease the oven tray, add parchment and grease it too.
  • Take a large mixing bowl and crack the eggs in it. Add sugar and whisk for a while. Add melted butter while whisking and then add vanilla extract.
  • Gently fold the flour till there are no pockets of flour.
  • Divide the mixture into two tins and bake for 35 minutes. Leave the cake to cool down and then turn the baking dish to a plate. Gently tap the tray in the middle so that the cake comes out clean.
  • Now make the buttercream. Take unsalted butter in a large bowl and whisk thoroughly. Add icing sugar slowly while whisking. Then add milk and scrape the seeds out of vanilla pod and add them to the mixture.
  • Divide the buttercream in two bowls and add two different food colours to them.
  • With the help of a sharp knife level the cakes and then put the coloured buttercream to make them one.
  • Keep the cake in refrigerator for 30 minutes. Now cover the entire cake with the buttercream of another colour.
  • Decorate the cake with the chocolate eggs and serve.
