Coconut Raspberry Cupcake

The delicious and refreshingly different coconut Raspberry cupcake is great tasting and easy to make. All you need is self raising flour, castor sugar, dried coconut flakes, essence of vanilla, and a few spoons of milk and fresh raspberries and butter for making these yummy cupcakes. Put all the stuff apart from the berries in a big bowl and mash them for a couple of minutes until the mixture is light and frothy. Put in the mixture into cupcake moulds and bake for 20 minutes. Remove the cakes when the outer cover turns firm brownish gold. Raspberry coulis, sugar and butter will be used to make the icing

Sweet and Spicy Pumpkin Cupcakes

Make your kids fall in love with the tantalizingly spicy pumpkin cupcakes that are perfect for the chilly months ahead. The ingredients you need are crushed cinnamon, crushed ginger and cloves, brown sugar, flour, baking soda, eggs, pumpkin puree etc while the frosting will be made of cinnamon flavoured cream cheese, butter, vanilla and cinnamon powder. Add the nutmeg, cinnamon, ginger, spices, baking soda etc to the flour and then place the mixture into a plate and set aside. Nutmeg Feather Cupcakes

If you want to feed your kid’s guilt free and light cupcakes then the feather cakes are a recipe you should definitely try. All you have to do is to mix together butter, castor sugar, shortening and cream in a bowl. The eggs will be beaten in and mixed well with flour, nutmeg, salt and baking soda. Now the batter is poured into the pan and baked for a full 40 minutes in a preheated oven till the cake turns fluffy and spongy.

Light Lemon Cupcakes

Your kids are surely going to love the light lemon cupcakes when you make them for birthday parties. All you have to do is to mix self rising flour, salt, vanilla extract, lemon zest, eggs into the bowl until the consistency is creamy and smooth. Add milk and lemon juice alternatively to the mixture after adding the flour. Once the cupcake liners are filled with the batter and baked in preheated oven for 17 minutes.  For the icing you need to whip the cream with lemon juice and sugar in an electric mixer till soft peaks are formed.

Chocolate Birthday Cupcakes

Birthdays are incomplete without chocolate so this delicious cupcake will bring a smile to the birthday boy or girls face. Butter and chocolate is melted in the oven and baking powder, salt, cocoa powder, flour is mixed together in a medium bowl. In a separate large bowl combine eggs, brown sugar, vanilla and butter chocolate mixture before adding refined flour to it. The batter reaches a creamy thick consistency and is then poured into the cupcake liner and baked for 18 minutes. For the delicious chocolate icing you need to whip sugar, cocoa powder and vanilla essence with cream until velvety mounds of icing are produced.
