Apple Carrot Grape and Mint Salad


Ingredients
Apple
Carrots
Grapes
Mint leaves
Olive oil
Apple cider vinegar
Honey
Lemon
Black pepper
Salt

Method
Grate the carrots and put them in the microwave to soften for 40 sec. And then chill it.

Cut apple into small thin pieces, soak them in one cup water and 1/2 lemon for 3-5 min. and rinse them with drinking water. This will ensure they apples don't darken and your salad will continue to look fresh.

Wash and tear mint leaves with hands (instead of cutting with the knife). This will release its lovely fragrance and taste.

Cut grapes into 4 pieces. Grapes help add a juicy texture in your mouth.

Make the dressing with 1 1/2 tsp Apple cider vinegar, 1 tsp honey, 1 tbsp olive oil. Mix well and your vinaigrette is ready.

Finally in a large salad bowl, mix the carrots, apples, grapes and mint leaves with the vinegrette and mix. Sprinkle salt and black pepper to taste. Your salad will have a variety of flavours and textures.
