BITTERGOURD CURD CHUTNEY Recipe | Chutney/Dips Recipe by chandrika menon |
| INGREDIENTS | 1 medium sized Bittergourd.
1 full cup of grated Coconut.
5 green Chillies.
1 full spoon of Mustard.
A cup of sour Curd.
Oil to deep fry.
2 dry red Chillies.
Curry Leaves.
salt to taste. | METHOD | 1. Cut bittergourd into round thin slices add 1/4 spoon of salt mix well and keep aside for a hour. Then squeeze the bittergourd and remove the bitter water from the gourd which would have come out by that time and deep fry in the oil. Smash the deep fried bittergourd and keep aside.
2. Grind the cocunut into nice paste by adding chillies and 1/4 tea spoon of mustard at the end. Pour the mixture into a vessel add the sour curd and salt and the smashed deep fried bitter gourd.
3. Season with mustard, curry leaves and red dry chillies and add to the mixture above.
4. Serve with hot rice, chapathi, dosa can be kept for 3 days. |
