NAVRATAN KORMA Recipe | Main Course Recipe by Smita Nadgir |
| INGREDIENTS | 500 gms - vegetables cleaned and cut into pieces (potatoes, beans, carrots and peas in equal amounts)
6 tbsps - refined oil
2 tbsps - cashewnut paste
1/2 cup curds (yoghurt)
4 tsps (20-25 gms) - Priya veg curry masala paste
50 gms cashewnut pieces
2 tbsps coconut paste
Salt to taste
1/4 cup greens chopped (fresh coriander, mint, green chillies)
1/2 tsp - garam masala powder Lavang (clove), elaichi (cardamom), dalchini (cinnamon)
| METHOD | 1. Frying the vegetables
Fry cashewnut pieces in a pan with 4 tbsps oil until they turn golden brown and remove. Add vegetables to the oil, fry well and remove.
2. Cooking the vegetables
Add 2 more tbsps oil to the pan along with curds, cashewnut paste, Priya veg. curry masala paste, fried vegetables and two cups of water. Cover and cook till the vegetables are soft.
3. Making the korma
Add the coconut paste, fried cashwenut pieces, chopped greens and garam masala powder. Simmer and cook for five minutes.
Garnish with chopped mint leaves and serve hot. |
