BAIGAN BAGARA Recipe
Main Course Recipe by Chundurisirisha

  INGREDIENTS
Small brinjals(gutti vankaya)-1/2 kg
3 - Onions finely chopped
Ginger & Garlic paste - 1tsp
Oil - 1/2 cup

Fry in 1tsp of oil & grind to powder:

Cloves - 4
Cinamomum - 1 stick
Elaichi - 2

Grind to a paste:

Peanuts fried in oil - 1/2 cup
Khus-khus - (Dry roasted-1tsp)
Grated fresh coconut - 1/2 cup
Garam masala powder - 1tsp(the one which we grinded before)
Tamarind paste - 1/4th tsp
Haldi powder - 1/4th tsp
Chilli powder - 1/2 tsp
A pinch of sugar
Salt to taste
Water - 1 cup

  METHOD
1. Wash the brinjals and cut them lengthwise into 4 parts making sure the green stem part(thodima) remains intact.

2. Heat the oil in a kadai and fry the brinjals till they are done & then take them out of the oil and keep them aside.

3. To the remaining oil add finely chopped onions and ginger-garlic paste. Fry till the onion turn pink and translucent.

4. Add the peanut paste to the kadai and cook till the masala leaves the fat. Cook covered on a low flame sterring often. If required add water.

5. Add the fried brinjals to the masala and cook without cover for 3 mins.

6. Turn the gas off and dish out the bagara into a serving bowl.

Baigan bagara is made in so many different ways but this is the way i like the most. If u want u can add 1/2 a cup of beaten curds at the end.
