  INGREDIENTS
carrots, ash gourd,sweet potato,cluster beans,potatoes,drumsticks whichever is vegetable,the cut vegetables can be 3 cups,fresh and thick curd - 1 cup, grated coconut - 1/2 cup,green chillies-3, coconut oil-3 teaspoons,cashews-20, jeera-1 teaspoon

  METHOD
cut the vegetables and put it in pressure cooker with just enough water, cook in medium heat and give one whistle.Once the whistle comes, swich off the stove immediately and keep a teaspoon between the lid and the vessel. The steam will go automatically.When the vegetables are getting cooked, you can grind the coconut,green chillies and jeera together. You can add water to grind. Once the steam is released, add this mixture to the cooker and boil the mixture until it becomes like a gravy. After adding coconut, use high heat and do not cover the cooker. It should be open. Once the gravy consistency is reached, heat coconut oil, add curry leaves and cashews, fry and add to the aviyal.Swich off the stove.At the time of serving, you can mix curd.
