VEGETABLE BIRYANI Recipe

 40 minutes  6

  INGREDIENTS
1/3 cup oil,
1 tsf ghee ,
5 cloves,
small piece of cinnamon,
3 large onions(chopped),
3 tbsp curd,
pinch of turmeric,
5 garlic flakes and 1/2 inch ginger piece(both ground to a paste),
1/3 cup finely chopped coriander leaves,
4 green chillies slit,
2 carrots diced ,
1/3 cup green peas,
1tbsp each of diced potato,cauliflower & beans ,
4 cups of basmati rice ,
6 cups of water,
salt to taste

  METHOD
1.Fry oil in a small cooker or pressure pan.Add ghee also.Add the whole cloves & cinnamon.
2.Add the chopped onions & fry them till golden brown.
3.Add curd & turmeric.
4. Add garlic-ginger paste.
5.Add green chillies & coriander
6.Cook for some time.
7.Add vegetables & cook for some more time.
8.Add washed basmati rice & pour exactly 6 cups of water and add salt.
9. Cover the lid & bring to only one whistle.
10.Stop heating & allow it to cool for 15-20 minutes.
11.Eat with raita.Good for those who dont like it so spicy.
