Leftover boiled potatoes can be added with some paneer and used for making sandwich stuffing. The water used for boiling vegetables can be used to make soup.

The leftover dal can be used to make rasam or sambar. Add a lot fresh vegetables finely chopped to the leftover rice and make pulao out of it. Or leftover rice can also be used to make papad.
