there are so many types of wonderful fish in the usa. where you live makes a difference in what will be fresh and native.
for pacific coast.. go w/ salmon. cook on a barbecue or in broiler w lemon rings or juice and dill weed. also wonderful w/teriyaki sauce.
mackerel is a great tasting fish. also great on the bbq with a basting of soy sauce. serve w/lemon wedge.
pacific saury is wonderful, but a very bitter taste near the head. this is called sanma in japanese supermarkets. also good bbq'd w/ soy sauce.
pacific northwest has wonderful smoked fish. usually eaten as appetizers. can be expensive. can be incorporated into salads or cream sauces, too.
halibut is a very pacific fish, esp from alaska. can be baked, broiled, bbq'd, etc.
florida has pompano as a favorite. nice tasting fish.
the east coast has flounder. often fried and served w/ almonds. (lemon, tartar sauce, tabasco, etc, on the side)
trout is a fresh water fish in the mountains and farms, etc. (bass, too). this is often pan fried after breading. watch for bones. can be done on a bbq, too, w/a fish rack.
louisiana is famous for seafood, mostly shellfish. crayfish, shrimp, oysters, crabs, (o, catfish, too) etc. these are usually breaded and fried there, and served w/ very hot & spicy sauces.
new england (boston, maine, etc) is famous for lobster and scallops many other fish. cod, too. the lobster can be steamed, grilled, boiled, etc. can be eaten as is, or made into a dish (like lobster pie in maine... a deep oven proof dish, put in chunks of lobster. put in chunks of butter. maybe a bit of salt and pepper, maybe some parsley. crush crackers and mix w/butter. cover over the lobster/butter mix in the dish. press down to 'seal'it.
bake in hot oven til hot & brown. (15 - 20 mins) (you can use any other type of pie crust, too.)
many portuguese in new england. they make bacalhuada out of salt cod. (maybe in goa, too?) you can make it out of fresh cod, too. it is cod, rice, potatoes, vegetables, olives, tomatoes, onions, lemon rings, good olive oil, etc, baked in a deep large pan. (like a lasagna pan) any fish would be good in this. everything is layered. smells exotic when cooking. tastes incredible. serve with olive oil...a verrrry good one.
fresh tuna is incredible. can be eaten raw for sushi/sashimi. (soy and wasabe for flavor) can also take a 2 inch or more diameter piece, marinate in olive oil, salt/pepper, your choice of spices. then freeze it...not too much, tho. pan fry in olive oil or bbq on the grill. keep turning until the outside is seared. this will not cook the inside if you are fast. allow to thaw, slice. serve. serve like carpaccio with olive oil, balsamic vinegar, fresh cracked pepper, etc. make up your own ideas to marinate/sprinkle on it. the seared portion and the raw portion complement each other.
crabs are very popular. typical of maryland and virginia. steamed in hot and spicy spices & salt, served w/ drawn butter (hot ghee, freshly made), white vinegar, and 'old bay'. old bay is a maryland style curry&salt mix. spicy. you dip the crab pieces as you pick them out in one, two, or three of the sauces. (like only butter, butter w/old bay, vinegar only, etc) this is a major tradition on the chesapeake bay and should not be missed if ever in the area. o,,, maryland crab dip. very easy, very good. crab meat, cream cheese, horseradish. mix together. bake in oven until bubbly. serve w/ crackers, raw vegetables, breads, parathas, etc. can add things to this, too, but those are the basic ingredients.
have a wonderful time exploring the fish in the usa. there are some great experiences ahead of you, i hope.
i feel like i have only touched the tip of this iceberg, though it seems like i have written a lot already.
enjoy!!
