hmmm, now i have never made a cake from scratch. but, when i was a kid, i would see my mom using all purpose flour for making bread and cake flour for making cakes. the cake flour she would use was called 'swan's down' or something like that. i don't know if it is still available at supermarkets.

all purpose flour is a blend of hard and soft wheat flours. hard wheat has more gluten. cake flour is made from soft wheat and has less gluten.

i did look up in my cookbooks & they said that you may, in emergencies, substitute 7/8 cup of all purpose flour for 1 cup of cake flour....although do not expect the same results.
