This is for those of u who are in US.How do u guys make idli ? which rice do u all use ? Does anyone makes idli with idli rawa here ? if so do u all ferment urid dhal batter separately and mix rawa later ?

What is idli-rawa? I have always made idli using sona masuri rice and urad dal in the ratio 3:1. And my idlis have almost always turned out nice. I guess there is no need of idli rawa. The key is that it should ferment properly.

I soak urid dhal about 1 cup the previous night in warm water and next day i soak idli rawa about 3 cups in warm water, then i grind the urid dhal and mix it with idli rawa. My idlis are soft and non-sticky. Try this

Try this formula:
Long enriched rice(that U get in any American grocery store)-3 cups

Parboiled rice(also available in american grocery stores)-1 cup

urid dhal-1cup

Soak rice and dhal separately and grind separately.Regular blender is good enough to grind this.Grind in portions.Dont fill blender to more than 1/2.Dont add too much water.
Add both batter and add 1 tablespoon of salt.Mix well.The consistency of the batter should be slightly thick.
Leave the batter in a warm place overnight.When it ferments it will rise,so make sure you keep it in a big utensil.Or you can divide and keep it in two utensils.
Lightly oil the idli plates.Pout batter in the plates.Dont pour to make mounds,because idli will rise while cooking and stick to the plate above.
Cook in pressure cooker without the weight-important- for 7-8 min.Open immediately after steam from the nozzle stops(will take only few seconds)
Allow to cool for 1-2 min.You could run cold water over the back side of each plate if needed.Gently scoop out the idlies with a spoon which is dipped in water.
You can use the same batter for dosas.You can dilute the batter for this if you want.

your right, Use Boiled Rice ( If you ask for idly rice in your groceries shop they will give you)
soak & grind rice and urad dal separately and then mix them. (ration 1:4 u get really soft idlies)

Hi Kavitha,

u soak idli rava in water for five hrs and urad dhal seperately. u grind the urad dhal and add that to idly rava. keep near the stove as it will sour. u bake idly the next day. it tastes really good. am following this procedure only.

Do u also make idli using rice ? I've made using medium grain rice but never gave me satisfaction of perfect idli.I heard they use parboiled rice...Have u tried it ?
